OATS CHEELA


As we all know that oats are gluten-free healthiest whole grain on the earth.It is a great source of vitamins, fibers, minerals  and antioxidants.Oats are having many health benefits. They are used for weight loss, as an gluten-free food for a diabetic patient.It is also used to control the cholesterol levels in the body.

Oats and Oatmeal both are having high nutritional value.So including it in our diet , plays an important role in our body.Variety of  dishes can be made from it.Among them,oats cheela is one of the easily made breakfast recipe .They are same like besan cheela.It tastes very good.I can be serve with tomato sauce or other compliments.

OATS CHEELA RECIPE

Oats Cheela



INGREDIENTS:

1 cup oats(rolled or instant)
1/4 cup chikpea/besan
1 tbsp jeera/cumin powder
1/2 tbsp black pepper powder
1 tbsp salt(as needed)
11/2 cups of  water
1 green chili(finely chopped)
1 small onion (finely chopped)
1/2 carrot(grated)
1 tbsp coriander leaves
Ghee / Oil for cooking


HOW TO MAKE OATS CHEELA?


1. Take 1 cup of oats and powdered it into the jar.
2. Add 1/4 cup of besan,jeera powder,black pepper powder, salt, chopped green chili,chopped onion, grated carrot and coriander leaves.
3. Now add water as per the consistency of the batter.
4.Keep aside the batter for 5 mins.
5.Now, heat the tava on the medium flame and pour the  oats cheela batter onto it.
6. Spread  it onto tava to a thin pancake and dizzle oil or ghee onto the edges.
7.As one side gets cooked flip it to another side.Check it gets
8.Oats cheela is ready to serve.


NOTES :


1. Do not spread batter much.keep it thick like pancake.
2. It tastes good with curd.

Ragi Dosa

RAGI DOSA



Ragi is a nutritious and a healthy grain widely used as staple food in most of the South Indian states.Variety of dishes are made from this ragi which is also called by the different names like Finger Millet, Red Millet ,Nachni and many other.Among the variety of dishes Ragi Dosa is one of the healthy breakfast recipes.

It is also a  preferred food  for the Diabetic patients  and the kids.It is a instant recipe with no need of overnight fermentation like traditional dosa recipe.Here we are using ragi flour, wheat flour or rice flour.

This recipe can also be prepared using rava or simply the ragi flour.This dosa can be served with tomato chutneycoconut chutney, mint chutney, tomato ketchup or simply without any side compliments.

Ragi Dosa

 



 RAGI DOSA RECIPE

Ingredients:


1 cup Ragi Flour
1/4 cup Wheat Flour
1/2 cup curd/yogurt(or 1 cup Buttermilk)
1 inch ginger, finely chopped
1 green chilli, finely chopped
1 onion, finely chopped
3-4 curry leaves, finely chopped
2-3 tbsp coriander leaves ,finely chopped
1 tbsp jeera/cumin , crushed
1/2 tbsp black pepper , crushed
1 tbsp salt(as needed)
2 cups of water
3 tbsp grated cheese(for garnishing)
oil for roasting 


HOW TO MAKE RAGI DOSA?:

1. Take a bowl , add 1 cup ragi flour, 1/4 cup wheat flour(or rice flour)

2. Now add 1/4 cup of curd or 1/2 cup of buttermilk,1 inch ginger, 1 green chilli,1 onion, 3-4 curry leaves, 2-3 spoon coriander leaves,1/2 tbsp black pepper, 1 tbsp cumin/jeera and salt (as needed)

3. Add 2 cups of water in the bowl and mix it well so the batter becomes lump free

4. Keep the batter for 10-15 minutes.

5. Check the consistency of batter and add the water if required.

6. Take the tawa and keep it on the medium flame.

7. Now pour the ragi dosa batter on the tawa and sprinkle 1 tbsp oil on the dosa from the top.

8. As the dosa roasts into brown , flip over and cook.

9.Now grate the dosa with cheese and serve the delicious healthy ragi dosa.

NOTES:

1.Adding the curd is optional.
2.Add enough water to maintain the consistency.
3.Adding buttermilk with water into the batter, enhances the flavour of dosa.

Coconut Chutney

COCONUT CHUTNEY

Coconut chutney is one of the widely preferred chutney recipe served with idli,dosas, vada's,appam,uttapam  and many more vegan.Mostly South Indian recipes are incomplete without the coconut chutney.This chutney is very simple to prepare and can be made using few ingredients.There are number of variations of this chutney by using mint leaves, coriander leaves,lemon juice and many other. .In this recipe, we will make coconut chutney using roasted chana dal.

This chutney is good for health ,as we know that coconut helps for weight loss and also it is having high nutritional value.Later, I will share the variations made in this coconut chutney.

 COCONUT CHUTNEY RECIPE 

Preparation Time  :   5 mins

INGREDIENTS FOR CHUTNEY:

1 cup grated coconut
1/4 cup roasted chana dal
2 tbsp peanuts
3 green chilies(adjust as spicy needed)
1 tbsp jeera/ cumin
1/2 tbsp salt(as needed)
1 tbsp curd(optional)
water(as needed)


INGREDIENTS FOR TEMPERING  THE CHUTNEY:

1 tbsp oil
1/4 tbsp udad dal
1/4 tbsp mustard seeds / rai
1/2 tbsp asafoetida/ hing
1 red chili
2-3 curry leaves / kadi patta

HOW TO MAKE THE CHUTNEY?


1. Add grated coconut,roasted chana dal, peanuts,green chilies, jeera/cumin,salt in a grinding jar.
2. Now blend all the ingredients without adding water.This will make a smooth paste of chutney
3. Add curd if want. Then add water to make a smooth paste.
4. Place the chutney into the bowl.

HOW TO DO TEMPERING?

1.Heat 1 tbsp oil in a pan ,add 1/4 tbsp udad dal and 1/4 tbsp mustard seeds/rai
2.When dal changes to golden brown add 2-3 curry leaves,1 red chili  broken.
3. Now add hing and pour this onto the bowl of chutney.
4.Now mix it well.
5.Coconut chutney is ready to eat with south indian dishes  and other vegan.


NOTES:

1. The use of curd in the chutney makes it tastes more delicious like a restaurant.
2. Sesame seeds can also be used instead of udad dal for the tempering.

Tomato Chutney

TOMATO CHUTNEY

 The tomato chutney is basically made with tomatoes and spices.It is mainly paired with idli, dosa, cheela and many other snacks.The South Indian kitchen uses tomato  chutney as a part of breakfast and lunch.During the meal time also this chutney makes the snacks delicious .Variety of chutneys are used and prepared using bengal grams and chana dal, tomato chutney is of them.


Tomato Chutney


Tomato chutney can be prepared using number of variations like with or without onion.It can also be made using chana dal and udad dal. Red chilies are the most common used in every variations of this chutney as it makes the chutney spicy and more tasty.In our receipe we will make tomato onion chutney.



Tomato Chutney Recipe

Ingredients for the chutney :

3 tomatoes(chopped)
1 onion ( chopped)
4 to 6 red chillies
1/2 tbsp udad dal
2 garlic cloves
1/2 tbsp jeera /cumin
1/2 tbsp coriander leaves for garnishing
salt as needed
2 tbsp oil

Ingredients for tempering the chutney :

1 tbsp oil
1/4 tbsp udad dal
1/4 tbsp mustard seeds / rai
1/2 tbsp asafoetida/ hing
1 red chilli
2-3 curry leaves / kadi patta

            How to make the chutney??

1. Heat a pan with 2 tbsp oil .
2. On a medium flame add udad dal and roast it until it changes to golden brown.
3. Now add 1/2 tbsp jeera/ cumin and roast it , then add  4-6 red chilies and roast it for few seconds.
4. Add 2 garlic cloves,1 finely chopped onion and salt as needed.Fry it for 2-3 minutes.
5. Add 3 chopped tomatoes as the onion gets fried
6.Saute it until it gets soft.
7. Allow it to cool then blend it.
8.Take it in a bowl.
How to do tempering? 

1.Heat 1 tbsp oil in a pan ,add 1/4 tbsp udad dal and 1/4 tbsp mustard seeds/rai
2.When dal changes to golden brown add 2-3 curry leaves,1 red chilli broken.
3. Now add hing and pour this onto the bowl of chutney.
4.Now mix it well and garnish it with 1/2 tbsp of corriander leaves
5.Spicy tomato chutney is ready to serve with snacks and meals.

Notes:

1. Plain tomato chutney can be made by same recipe only skip the use of onion.
2. Sesame seeds can also be used instead of udad dal.
3. Instead of red chili , red chili powder can also be used.

Ragi which is also named as Nachni /Finger Millet is a whole grain that is gluten-free.It is a good source of carbohydrates that helps in weight loss and diabetes.It is also good dose of nutrients for babies ,toddlers and kids.When consumed regularly, it strengthens the bones,tooth,develops the brain and improves the overall health.

               Ragi Ladoo/Nachni Ladoo Recipe

Ingredients:


  • 1 cup Ragi flour/finger millet flour
  • 1/2 cup nuts(Cashews,Almonds,walnuts,etc)
  • 1/2 cup peanuts
  • 2 or 3 cardamon (Elaichi)
  • 200 gms sugar
  • 1/2 cup grated coconut (Copra)-Optional
  • 3 tbsp ghee
                                                 
Preparation for Ragi Ladoo

1.Take a pan and add ghee into it .Now fry the ragi flour on the low heat till you  get the nice aroma of the ragi.Keep it aside to cool.
2.Roast the peanuts,allow it to cool and remove the skin
3. Roast the nuts and allow it to cool.
4. Roast the coconut and allow it to cool
5.Now powder the peanuts and nuts together in the mixture


How to make the ladoo?

1.In a large bowl add the ragi flour, blended powder, cocunut and sugar.
2. Now mix all the ingredients .If needed add the melted ghee to make the ragi ladoo
3.Store the ragi ladoo in the air tight container
